  • Author: Jennie Graham
  • Total Time: 15 minutes
  • Yield: 30 small pieces (serves 10-15 as appetizers) 1x

Description

Fresh, elegant cucumber cream cheese sandwiches with herbs – perfect for tea parties, light lunches, or entertaining guests.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 3 tablespoons mayonnaise
  • 2 teaspoons chopped fresh dill
  • 1 teaspoon chopped fresh chives
  • ΒΌ teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 English cucumber, thinly sliced
  • 1 loaf white bread or bread of choice, crusts removed

Instructions

  1. Using a hand mixer, blend cream cheese and mayonnaise in a small bowl until completely smooth. Stir in fresh dill, chives, garlic powder, salt, and pepper to taste.
  2. Evenly spread the cream cheese mixture onto one side of each bread slice, ensuring complete coverage from edge to edge.
  3. Thinly slice cucumbers and layer them over half of the prepared bread slices. Add extra herbs if desired for enhanced flavor.
  4. Top with remaining bread slices, remove crusts if desired, and cut each sandwich into 3 equal pieces for elegant presentation.
  5. Serve immediately for best texture, or cover and refrigerate for up to 24 hours if preparing ahead.

Notes

  • Allow cream cheese to soften at room temperature for 30 minutes before mixing to ensure smooth, lump-free spreading
  • Use a mandoline slicer or sharp knife to cut cucumbers uniformly thin for consistent texture and appearance
  • Pat cucumber slices dry with paper towels before layering to prevent sandwiches from becoming soggy
  • Chill assembled sandwiches for 15 minutes before cutting to help them hold their shape better
  • Store leftover cream cheese mixture in the refrigerator for up to one week for future sandwich making
