Description

A refreshing Mexican-inspired snack featuring crisp cucumber and sweet mango tossed in tangy chamoy sauce with a kick of chili powder. These Cucumber Mango Chamoy Cups are perfect for hot summer days or as a light appetizer.


Ingredients

  • 2 cups diced cucumber (about 1 large English cucumber)
  • 2 cups diced ripe mango (about 2 medium mangoes)
  • 3 tbsp chamoy sauce
  • 1 tbsp fresh lime juice
  • 1 tsp chili powder

Instructions

  1. Wash cucumbers and mangoes. Peel cucumbers if desired.
  2. Dice cucumbers into half-inch cubes and set aside in a bowl. Peel and dice mangoes into similar-sized pieces.
  3. In a mixing bowl, gently combine the diced cucumbers and mangoes.
  4. Drizzle lime juice over the mixture, add chamoy sauce, sprinkle chili powder, and toss until well coated.
  5. Spoon equal portions into small cups or bowls, topping with extra chamoy if desired.
  6. Serve immediately as a refreshing snack or appetizer.

Notes

  • For best flavor, use ripe but firm mangoes.
  • Adjust chamoy and chili powder to taste.
