- 1 cup (almonds, walnuts, or cashews) Mixed nuts
- 1 cup Rolled oats
- 2 tablespoons Honey or maple syrup
- 1 teaspoon Cinnamon
Instructions
- Prepare ingredients: Gather all ingredients and ensure dates are pitted and soft
- Process dates: Pulse Medjool dates in food processor until sticky paste forms. If too firm, soak in warm water for 5 minutes
- Add nuts and oats: Add mixed nuts and rolled oats to date paste, pulse until combined but still textured
- Add sweetener and spice: Drizzle honey or maple syrup and sprinkle cinnamon, pulse until mixture becomes sticky
- Form balls: Roll mixture into bite-sized balls using hands or ice cream scoop
- Chill: Place on lined baking sheet and chill for at least 1 hour before storing
Notes
- Soak dates in warm water for 5 minutes if they’re too firm to process smoothly
- Don’t over-process the nuts – leave some texture for better bite and mouthfeel
- Wet your hands slightly when rolling to prevent sticking and create smoother balls
