Description

This Creamy Tuscan Chicken is a romantic and delicious dinner for two, featuring tender chicken breasts in a rich, garlicky cream sauce with sun-dried tomatoes and spinach.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup baby spinach
  • ½ cup sun-dried tomatoes (in oil), drained and chopped
  • ½ cup heavy cream
  • ¼ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil for garnish (optional)

Instructions

  • Season the chicken breasts with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 5-6 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Add the heavy cream and Parmesan, stirring until smooth and creamy.
  • Stir in the sun-dried tomatoes and spinach, cooking until the spinach wilts.
  • Return the chicken breasts to the skillet and simmer for 2-3 minutes, coating them with the sauce.
  • Garnish with fresh basil and serve with a side of pasta, rice, or a light salad.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • You can add mushrooms or artichoke hearts for extra veggies.
  • Serve with a glass of white wine to complete the meal.
