This Creamy Tuscan Chicken is a romantic and delicious dinner for two, featuring tender chicken breasts in a rich, garlicky cream sauce with sun-dried tomatoes and spinach.

- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup baby spinach
- ½ cup sun-dried tomatoes (in oil), drained and chopped
- ½ cup heavy cream
- ¼ cup chicken broth
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh basil for garnish (optional)
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium heat. Cook the chicken breasts for 5-6 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Add the heavy cream and Parmesan, stirring until smooth and creamy.
- Stir in the sun-dried tomatoes and spinach, cooking until the spinach wilts.
- Return the chicken breasts to the skillet and simmer for 2-3 minutes, coating them with the sauce.
- Garnish with fresh basil and serve with a side of pasta, rice, or a light salad.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- You can add mushrooms or artichoke hearts for extra veggies.
- Serve with a glass of white wine to complete the meal.
