Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon (juice and zest)
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • Fresh parsley for garnish (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken breasts with oregano, paprika, salt, and pepper.
  • Sear the chicken for 6-7 minutes on each side until golden and fully cooked. Remove and set aside.
  • In the same skillet, add garlic and sauté for 1 minute until fragrant.
  • Add lemon juice, zest, and cherry tomatoes. Cook for 2-3 minutes until the tomatoes soften.
  • Return the chicken to the skillet and spoon the lemon garlic sauce over the top. Garnish with parsley if desired and serve hot.
