Ingredients

  • 1 cup whole milk ricotta cheese (room temperature works best)
  • 1 tablespoon olive oil (extra virgin preferred)
  • 12 tablespoons heavy cream or whole milk
  • Generous pinch of salt and black pepper
  • 4 slices good-quality sourdough bread
  • 46 large fresh figs
  • Honey for drizzling
  • Fresh basil leaves
  • Flaky sea salt for finishing

Instructions

  1. Add ricotta, olive oil, milk or heavy cream, and a generous pinch of salt and pepper to a small bowl. Whisk vigorously for 1-2 minutes until the ricotta becomes light, fluffy, and whipped.
  2. Toast your sourdough bread slices in a toaster, skillet on medium heat, or on a baking sheet in the oven until golden brown and crispy on the outside but still tender inside.
  3. Spread a generous layer of whipped ricotta on each piece of toast. Slice figs vertically into 2-3 slices each and arrange them attractively on top of the ricotta.
  4. Top each toast with fresh basil leaves, drizzle with honey, and finish with a sprinkle of flaky sea salt. Serve immediately for the best texture and flavor.

Notes

  • Choose figs that are slightly soft but not mushy – they should yield gently to pressure when ripe and ready to eat
  • Room temperature ricotta whips more easily than cold ricotta, so take it out of the refrigerator 15-20 minutes before preparing
  • Toast the bread until it’s golden and crispy to provide the perfect textural contrast to the creamy ricotta and soft figs
  • Slice figs just before serving to prevent them from releasing too much juice and making the toast soggy
  • Use high-quality honey as it makes a noticeable difference in the final flavor – wildflower or clover honey work particularly well
