Description

Instructions

  • Step 1: In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and a pinch of salt until well combined
  • Step 2: In another bowl, mix pumpkin puree, milk, and eggs until smooth and no lumps remain
  • Step 3: Pour wet ingredients into dry ingredients and gently fold until just combined; avoid over-mixing to maintain fluffiness
  • Step 4: Preheat griddle over medium heat. Pour batter onto hot surface and cook until bubbles form (about 3 minutes)
  • Step 5: Flip carefully and cook until golden brown (another 2-3 minutes). Serve warm with maple syrup

Notes

  • Use room temperature ingredients for better mixing and smoother batter consistency
  • Don’t overmix the batter – lumps are okay and will create fluffier pancakes
