Description
Deliciously fluffy pumpkin pancakes with warm autumn spices, perfect for a cozy breakfast. These pancakes are naturally moist from pumpkin puree and have the perfect balance of cinnamon and nutmeg.
Ingredients
Scale
- 1 cup all-purpose flour
- 1 cup pumpkin puree
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 3/4 cup milk
- 2 large eggs
- Maple syrup for serving
Instructions
- Step 1: In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and a pinch of salt until well combined
- Step 2: In another bowl, mix pumpkin puree, milk, and eggs until smooth and no lumps remain
- Step 3: Pour wet ingredients into dry ingredients and gently fold until just combined; avoid over-mixing to maintain fluffiness
- Step 4: Preheat griddle over medium heat. Pour batter onto hot surface and cook until bubbles form (about 3 minutes)
- Step 5: Flip carefully and cook until golden brown (another 2-3 minutes). Serve warm with maple syrup
Notes
- Use room temperature ingredients for better mixing and smoother batter consistency
- Don’t overmix the batter – lumps are okay and will create fluffier pancakes
- Test griddle temperature with a water droplet – it should sizzle and evaporate quickly
- Keep finished pancakes warm in a 200°F oven while cooking remaining batches
