- 4 slices thick Texas-style bread
- 2 slices Colby jack cheese
- 2 slices pepper jack cheese
- Butter for cooking

Instructions
- Butter one side of each bread slice and set aside
- Melt butter in a frying pan over low heat
- Fry eggs to your preferred doneness
- Season eggs with salt and pepper
- Remove eggs from heat when done
- Place bread buttered-side down in second pan
- Add Colby jack cheese slice on bread
- Place two fried eggs on cheese
- Top eggs with pepper jack cheese
- Add second bread slice, buttered-side up
- Cover and cook until golden brown on both sides
