- 2 cups button/cremini sliced mushrooms
- 4 cloves fresh garlic, minced
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Prep vegetables: Wash and cut cauliflower into bite-sized florets. Slice mushrooms thinly for even cooking.
- Heat oil and garlic: Add olive oil and minced garlic to large skillet over medium heat. Sauté until fragrant, about 30 seconds.
- Cook mushrooms: Add sliced mushrooms first. Cook until golden brown, approximately 5 minutes without stirring initially.
- Add cauliflower: Incorporate cauliflower florets into skillet. Season with salt and pepper, then stir well to combine.
- Steam covered: Cover skillet with lid. Cook for 8-10 minutes until cauliflower is tender but still firm to bite.
- Finish and serve: Remove from heat. Sprinkle with chopped fresh parsley and serve immediately while hot.
Notes
- Don’t overcrowd the pan – cook in batches if needed for better browning
- Let mushrooms cook undisturbed initially to develop golden color
- Test cauliflower doneness with a fork – it should be tender but not mushy
- Store leftovers in refrigerator for up to 3 days and reheat gently before serving
