- 4 pieces (1.5 lbs) boneless skinless chicken breasts
- 2 tablespoons fresh garlic, minced
- 1/4 cup low-sodium soy sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- 2 pieces large onions, sliced
- 2 tablespoons olive oil
Instructions
- Marinate the Chicken: In a bowl, mix soy sauce, balsamic vinegar, minced garlic, and brown sugar. Add chicken breasts and marinate for at least 30 minutes.
- Prepare the Onions: Heat olive oil in a skillet over medium heat. Add sliced onions and cook for about 20 minutes until golden brown and caramelized.
- Grill the Chicken: Preheat grill to medium-high heat. Remove chicken from marinade (reserve it) and grill for 6-7 minutes per side until cooked through (165°F).
- Glaze with Onions: Once grilled, top chicken with caramelized onions and let sit for a couple of minutes to absorb flavors.
- Serve: Plate the chicken, drizzle with remaining glaze from the pan, and enjoy!
Notes
- Pound chicken breasts to even thickness before marinating to ensure uniform cooking and better flavor penetration
- Reserve some fresh marinade separately before adding raw chicken for safe basting and serving sauce
- Let chicken rest at room temperature for 15 minutes before grilling to promote even cooking throughout
