Grilled Chicken Teriyaki Pizza Recipe

Description

Delicious fusion pizza combining sweet teriyaki sauce, grilled chicken, fresh pineapple, and melted mozzarella on a crispy grilled crust.


Ingredients

  • 1 pound homemade pizza dough or store-bought
  • 1 cup chopped cooked chicken (leftover or rotisserie)
  • 3/4 cup chopped cooked turkey strips (about 8 thick-cut strips)
  • 3/4 cup chopped fresh pineapple
  • 3/4 cup shredded mozzarella cheese
  • 1/2 cup chopped scallions
  • 1/2 cup Soy Vay® Veri Veri Teriyaki Marinade, divided

Instructions

  1. Preheat the grill to high heat, 500-600 degrees F. Place a large baking stone over the grates to heat up.
  2. Place the chopped chicken in a medium bowl and pour 1/4 cup Soy Vay® Veri Veri Teriyaki Sauce over the top. Toss to coat evenly.
  3. Cut the pizza dough into four equal pieces, then roll each piece out into an 8-inch circle. Spread 1 tablespoon of teriyaki sauce over each crust, leaving a 1/2 inch rim around the edges.
  4. Top each pizza with chicken, pineapple, turkey strips, scallions and a light sprinkling of cheese. Avoid overloading with toppings.
  5. Slide the pizzas onto a baking sheet with a large flat spatula. Transfer them to the hot baking stone on the grill. Close the grill and cook for 3-5 minutes, until the edges are crisp and bubbly.

Notes

  • Let the baking stone heat for at least 15 minutes before adding pizzas for optimal crust crispiness
  • Roll dough on parchment paper for easier transfer to the grill without tearing
  • Pat pineapple chunks dry with paper towels to prevent excess moisture on the pizza
  • Keep toppings light and evenly distributed to ensure proper cooking and prevent soggy spots
  • Have all toppings prepped and ready before starting since grilling happens quickly
