Perfectly grilled nectarines paired with creamy Greek yogurt and golden honey create an elegant dessert that’s ready in minutes.

- 1 cup balsamic vinegar
- 10 oz plain Greek yogurt
- 3 tablespoons honey
- Pinch of salt
- ½ teaspoon vanilla extract
- 4 nectarines (ripe but firm)
- 2 tablespoons canola oil
- ¼ cup chopped pistachios
Instructions
- Bring balsamic vinegar to a boil over high heat in a small saucepan, then reduce to medium heat and simmer for 20 minutes until thickened
- Combine Greek yogurt, honey, vanilla, and salt in a small bowl. Mix thoroughly and taste, adjusting sweetness with additional honey if desired. Cover and refrigerate
- Halve nectarines and remove pits. Brush with canola oil. Place cut-side down on hot grill and cook for 4½ minutes without moving
- Spoon yogurt mixture onto serving plates. Use the back of a spoon to smooth and create an elegant teardrop shape
- Place one grilled nectarine half onto each yogurt portion, cut-side up to show the beautiful grill marks
- Sprinkle chopped pistachios over the top and gently drizzle with balsamic reduction using a spoon
Notes
- Choose nectarines that yield slightly to pressure but aren’t overly soft to maintain shape during grilling
- Don’t move nectarines while grilling to achieve perfect caramelization and grill marks
- Balsamic reduction continues thickening as it cools, so remove from heat when slightly thinner than desired
- Chill yogurt mixture for at least 30 minutes to enhance temperature contrast with warm fruit
- Toast pistachios lightly in a dry pan for extra crunch and deeper flavor
