Ingredients

  • 2 large ripe peaches
  • 4 oz feta cheese
  • 4 cups fresh arugula
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  • Prep the Grill: Preheat grill to medium heat (about 350°F). Clean grates thoroughly and lightly oil to prevent sticking.
  • Prepare Peaches: Halve peaches and remove pits. Pat dry with paper towels to ensure good grill contact.
  • Grill Peaches: Place cut-side down on grill for 4-5 minutes until tender with visible grill marks. Don’t move them too early.
  • Make Dressing: In large bowl, whisk olive oil, balsamic vinegar, salt, and pepper until well combined.
  • Assemble Salad: Toss arugula with dressing until evenly coated. Gently fold in grilled peaches and crumbled feta.
  • Finish and Serve: Drizzle honey over assembled salad just before serving for optimal freshness.
