Easy Grilled Shrimp Cheese Sandwich Recipe

  • 1 teaspoon unsalted butter
  • 2 slices sprouted grain bread
  • 1.5 ounces extra sharp cheddar cheese, shredded
  • 4 large pre-cooked, peeled and deveined shrimp, defrosted

Instructions

  1. Heat butter in non-stick skillet over medium heat until melted and foaming
  2. Place two bread slices in buttered skillet and top each slice evenly with shredded cheddar cheese
  3. While bread toasts, add shrimp to the same skillet and heat for 1-2 minutes until warmed through
  4. Add warm shrimp to one cheese-topped bread slice, nestling them into the melted cheese
  5. Using spatula, lift the plain cheese slice and press it onto the shrimp slice to form sandwich
  6. Cook until golden brown on both sides, then remove and slice with serrated knife if desired

Notes

  • Keep heat at medium to prevent burning the bread while ensuring cheese melts completely
  • Pat shrimp dry before heating to prevent excess moisture from making bread soggy
  • Shred cheese fresh for better melting properties compared to pre-shredded varieties
  • Press sandwich gently with spatula to help ingredients meld together without squashing
