- 1 teaspoon unsalted butter
- 2 slices sprouted grain bread
- 1.5 ounces extra sharp cheddar cheese, shredded
- 4 large pre-cooked, peeled and deveined shrimp, defrosted
Instructions
- Heat butter in non-stick skillet over medium heat until melted and foaming
- Place two bread slices in buttered skillet and top each slice evenly with shredded cheddar cheese
- While bread toasts, add shrimp to the same skillet and heat for 1-2 minutes until warmed through
- Add warm shrimp to one cheese-topped bread slice, nestling them into the melted cheese
- Using spatula, lift the plain cheese slice and press it onto the shrimp slice to form sandwich
- Cook until golden brown on both sides, then remove and slice with serrated knife if desired
Notes
- Keep heat at medium to prevent burning the bread while ensuring cheese melts completely
- Pat shrimp dry before heating to prevent excess moisture from making bread soggy
- Shred cheese fresh for better melting properties compared to pre-shredded varieties
- Press sandwich gently with spatula to help ingredients meld together without squashing
- Let sandwich rest for 30 seconds before cutting to allow cheese to set slightly
