A delicious and easy recipe for Hawaiian Teriyaki Chicken featuring tender chicken thighs marinated in a sweet and savory teriyaki sauce with tropical pineapple flavors.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup soy sauce
  • 1 cup packed brown sugar
  • 1 cup pineapple juice
  • 4 cloves garlic, chopped
  • 1 tbsp fresh ginger, minced

Instructions

  1. Marinate the Chicken: In a bowl or Ziploc bag, combine soy sauce, brown sugar, pineapple juice, garlic, and ginger. Mix until sugar dissolves completely. Add chicken, ensuring full coating. Marinate in refrigerator for at least 4 hours or overnight for best results.
  2. Prepare the Marinade: Remove chicken from marinade and set aside on a clean plate. Pour remaining marinade into a saucepan and simmer for 5-10 minutes to eliminate bacteria. Let cool before using as basting sauce.
  3. Grill the Chicken: Preheat grill to medium-high heat (around 400°F). Grill chicken for 6-8 minutes per side, brushing with cooled marinade halfway through. Check internal temperature reaches 165°F with meat thermometer.
  4. Serve: Transfer grilled chicken to serving dish and pour remaining reduced marinade over top. Let rest for 2-3 minutes before serving to allow juices to redistribute.
