- 3 cups cooked, shredded boneless, skinless chicken breasts
- 1 cup plain Greek yogurt
- 1 cup chopped celery
- 1 cup halved red grapes
- 2 sheets frozen puff pastry
- 2 tablespoons Dijon mustard
- Salt and pepper to taste
Instructions
- Prep and Preheat: Preheat oven to 400°F (200°C) and line baking sheet with parchment paper
- Cook Chicken: Boil chicken breasts for 15 minutes until fully cooked, then cool and shred into bite-sized pieces
- Make Filling: Mix shredded chicken, Greek yogurt, Dijon mustard, celery, grapes, salt, and pepper until well combined
- Prepare Pastry: Roll out thawed puff pastry on floured surface and cut into 4-inch squares
- Assemble Puffs: Place one spoonful of filling in center of each square, fold corners to form triangles
- Bake: Brush tops with egg wash and bake 20-25 minutes until golden brown and puffed
Notes
- Don’t overfill pastry squares – use about 2 tablespoons of filling per square to prevent bursting during baking
- Thaw puff pastry completely but keep it cold for maximum puffiness and to prevent soggy bottoms
- Drain excess liquid from chicken salad mixture and seal edges firmly with a fork to prevent leaking
- Let puffs cool for 5 minutes before serving to allow filling to set and prevent burns
