Description

Delicious and nutritious chicken salad puffs made with Greek yogurt, fresh vegetables, and flaky puff pastry for a perfect appetizer or light meal.


Ingredients

  • 3 cups cooked, shredded boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 1 cup chopped celery
  • 1 cup halved red grapes
  • 2 sheets frozen puff pastry
  • 2 tablespoons Dijon mustard
  • Salt and pepper to taste

Instructions

  • Prep and Preheat: Preheat oven to 400°F (200°C) and line baking sheet with parchment paper
  • Cook Chicken: Boil chicken breasts for 15 minutes until fully cooked, then cool and shred into bite-sized pieces
  • Make Filling: Mix shredded chicken, Greek yogurt, Dijon mustard, celery, grapes, salt, and pepper until well combined
  • Prepare Pastry: Roll out thawed puff pastry on floured surface and cut into 4-inch squares
  • Assemble Puffs: Place one spoonful of filling in center of each square, fold corners to form triangles
  • Bake: Brush tops with egg wash and bake 20-25 minutes until golden brown and puffed

Notes

  • Don’t overfill pastry squares – use about 2 tablespoons of filling per square to prevent bursting during baking
  • Thaw puff pastry completely but keep it cold for maximum puffiness and to prevent soggy bottoms
  • Drain excess liquid from chicken salad mixture and seal edges firmly with a fork to prevent leaking
  • Let puffs cool for 5 minutes before serving to allow filling to set and prevent burns
