  • 2 cups powdered sugar

Instructions

  • Preparation: Preheat oven to 350°F (175°C). Grease jelly roll pan and line with parchment paper for easy removal
  • Mix Dry Ingredients: Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in medium bowl
  • Combine Wet Ingredients: Beat sugar and melted butter until smooth. Add eggs one at a time, then pumpkin puree
  • Create Batter: Gently fold dry ingredients into wet mixture until just combined. Avoid overmixing
  • Bake: Spread batter evenly in prepared pan. Bake 15-20 minutes until toothpick comes out clean
  • Initial Rolling: Cool 5 minutes, then roll cake in powdered sugar-dusted towel. Cool completely
  • Make Filling: Beat softened cream cheese, powdered sugar, and vanilla until smooth and fluffy
  • Final Assembly: Unroll cake, spread filling evenly, then re-roll without towel. Wrap and chill

  • Use room temperature eggs for better incorporation and smoother batter texture
