A refreshing and vibrant frozen treat combining floral hibiscus tea with sweet mixed berries, perfect for hot summer days.
Ingredients

- 1/2 cup dried hibiscus flowers
- 2 cups water
- 1/4 cup sugar
- 1 cup mixed berries
- 1 tbsp lemon juice
Instructions
- Prepare Hibiscus Tea: Boil 2 cups of water, then remove from heat and steep the dried hibiscus flowers for about 15 minutes
- Strain and Sweeten: Strain the hibiscus mixture, add sugar while warm, and stir until dissolved
- Prepare Berry Mixture: In a blender, combine mixed berries and lemon juice; blend until smooth
- Layer the Mixtures: Fill popsicle molds halfway with the hibiscus mixture, layer the berry blend on top, and swirl if desired
- Freeze: Insert sticks and freeze for at least 4 hours until solid
- Unmold: To unmold, run warm water over the outside of the molds for about 10 seconds
Notes
- Allow hibiscus tea to cool completely before layering to prevent melting the berry mixture
- Use frozen berries for a thicker consistency that layers better with the hibiscus base
- Insert popsicle sticks when mixture is partially frozen for better stability
- For best results, freeze overnight before serving for optimal texture and flavor
