Instructions
- Step 1: Prepare Crust – Combine flour and salt in large bowl. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water until dough forms. Divide into two discs and chill for at least one hour.
- Step 2: Preheat Oven – Set oven temperature to 425°F (220°C). Position rack in lower third of oven for even bottom crust browning.
- Step 3: Make Filling – Toss sliced apples with both sugars, lemon juice, cinnamon, and salt. Let mixture sit for 10 minutes to release natural juices.
- Step 4: Roll Bottom Crust – Roll one disc on floured surface to 12-inch circle. Transfer to pie dish, leaving 1-inch overhang around edges.
- Step 5: Assemble Pie – Pour apple mixture into crust. Dot with small butter pieces. Cover with second rolled crust, seal edges, and cut decorative slits for steam vents.
- Step 6: Bake – Bake for 45-50 minutes until crust is golden brown and filling bubbles through vents. Cool completely before serving.
Notes
- Keep butter extremely cold – freeze cubes for 10 minutes before using for maximum flakiness
- Don’t overwork the dough as this develops gluten and creates tough crust texture
- Brush top crust with milk and sprinkle sugar for beautiful golden finish
- Place pie on baking sheet to catch any overflow and prevent oven mess
