Ingredients

  • 1 cup (110°F) warm milk
  • 1/2 cup (softened) unsalted butter
  • 1 tsp + extra for filling ground cinnamon
  • 1/2 cup pure honey
  • 2 large eggs
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Activate Yeast: Combine warm milk (110°F), sugar, and yeast in large bowl. Let sit 5-10 minutes until frothy and bubbly.
  2. Mix Wet Ingredients: Add melted butter, eggs, and vanilla extract to yeast mixture. Whisk until well combined.
  3. Form Dough: Gradually add flour, mixing until soft dough forms that pulls away from bowl sides.
  4. Knead Dough: Turn onto floured surface and knead 5-7 minutes until smooth and elastic.
  5. First Rise: Place in oiled bowl, cover with damp cloth. Let rise 1 hour until doubled in size.
  6. Shape and Fill: Punch down dough, roll into rectangles. Spread butter-cinnamon mixture, roll tightly into logs.
  7. Second Rise: Place rolls in greased baking dish. Let rise 30 minutes until puffy.
  8. Bake: Preheat oven to 350°F. Bake 20-25 minutes until golden brown on top.

Notes

  • Test milk temperature with thermometer – too hot kills yeast, too cool won’t activate properly for optimal rise
  • Knead until dough passes windowpane test – stretch small piece until translucent without tearing for perfect texture
  • Create warm rising environment by placing bowl near preheating oven or in slightly warmed oven turned off
  • Roll dough evenly to 1/4-inch thickness for consistent baking and uniform honey bun size throughout batch
