Description

Authentic homemade soup dumplings with tender pork filling and savory broth that bursts in your mouth. These traditional xiaolongbao are made with a delicate wrapper and gelatinized broth for the perfect soup dumpling experience.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup warm water
  • 1/2 lb ground pork shoulder
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp gelatin powder
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 1 tbsp minced fresh ginger
  • Salt to taste

Instructions

  1. Prepare Broth Gel: Simmer chicken broth and stir in gelatin until completely dissolved. Pour into shallow dish and refrigerate until firm, about 2 hours.
  2. Make Dough: Combine flour and warm water in bowl to form rough dough. Knead for 10 minutes until smooth and elastic. Cover and rest 30 minutes minimum.
  3. Prepare Filling: Mix ground pork with minced ginger, soy sauce, sesame oil, and salt until well combined. Chop firm broth gel into small pieces and fold into pork mixture.
  4. Shape Wrappers: Roll rested dough into golf ball-sized portions. Flatten each into 3-inch wide circles, keeping edges thinner than center.
  5. Fill and Seal: Place filling in center of each circle. Pinch pleats around filling, gathering at top to seal tightly. Ensure no air bubbles remain.
  6. Steam: Steam dumplings over boiling water for 6-8 minutes until cooked through. Serve immediately while hot.

Notes

  • Keep unused dough covered with damp cloth to prevent drying out during assembly process
  • Work quickly when adding gel pieces to filling since they start melting at room temperature
  • Line steamer with parchment paper or cabbage leaves to prevent sticking without affecting flavor
  • Create at least 18 pleats around each dumpling for authentic appearance and proper sealing
