  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk or buttermilk
  • 2 large eggs
  • 1/3 cup pure honey
  • 1/4 cup melted butter

Instructions

  • Preheat and Prepare: Preheat oven to 400°F (200°C). Grease cast iron skillet or 8×8 baking pan thoroughly
  • Mix Dry Ingredients: Whisk cornmeal, flour, baking powder, and salt in large bowl until well combined
  • Combine Wet Ingredients: In separate bowl, mix milk, eggs, honey, and melted butter until smooth
  • Combine Mixtures: Pour wet ingredients into dry mixture. Stir gently until just combined – don’t overmix
  • Bake: Pour batter into prepared pan. Bake 20-25 minutes until golden brown and toothpick comes out clean

Notes

  • Use room temperature eggs and milk for better mixing and even texture throughout the batter
  • Don’t overmix the batter – lumps are okay and will disappear during baking for tender results
  • Preheat your cast iron skillet in the oven for extra crispy edges and better heat distribution
  • Let cool for 10 minutes before cutting to prevent crumbling and allow proper setting
