Ingredients
Scale
- 1 cup medium-ground cornmeal
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup whole milk or buttermilk
- 2 large eggs
- 1/3 cup pure honey
- 1/4 cup melted butter
Instructions
- Preheat and Prepare: Preheat oven to 400°F (200°C). Grease cast iron skillet or 8×8 baking pan thoroughly
- Mix Dry Ingredients: Whisk cornmeal, flour, baking powder, and salt in large bowl until well combined
- Combine Wet Ingredients: In separate bowl, mix milk, eggs, honey, and melted butter until smooth
- Combine Mixtures: Pour wet ingredients into dry mixture. Stir gently until just combined – don’t overmix
- Bake: Pour batter into prepared pan. Bake 20-25 minutes until golden brown and toothpick comes out clean
Notes
- Use room temperature eggs and milk for better mixing and even texture throughout the batter
- Don’t overmix the batter – lumps are okay and will disappear during baking for tender results
- Preheat your cast iron skillet in the oven for extra crispy edges and better heat distribution
- Let cool for 10 minutes before cutting to prevent crumbling and allow proper setting
