- 2 medium sweet potatoes (1 cup mashed)
- 1 cup all-purpose flour
- 1 cup fine cornmeal
- 2 tsp baking powder
- 2 large eggs
- 1/3 cup pure honey
- 1/4 cup unsalted butter, melted
- 1 cup milk (buttermilk preferred)
Instructions
- Prep and Preheat: Preheat oven to 400°F (200°C). Spray baking dish with nonstick spray.
- Cook Sweet Potatoes: Peel and chop sweet potatoes into small chunks. Boil in salted water for 15 minutes until fork-tender. Drain completely.
- Mash Potatoes: Mash sweet potatoes until completely smooth with no lumps remaining. Let cool slightly.
- Combine Dry Ingredients: Whisk flour, cornmeal, baking powder, and pinch of salt in large bowl.
- Mix Wet Ingredients: Beat eggs in separate bowl. Add milk, mashed sweet potatoes, honey, and melted butter. Stir until well combined.
- Combine Mixtures: Pour wet ingredients into dry ingredients. Fold gently until just combined – don’t overmix.
- Bake: Transfer to prepared dish. Bake 25-30 minutes until golden brown and toothpick comes out clean.
Notes
- Choose orange-fleshed sweet potatoes for the best color and natural sweetness
- Don’t skip draining the sweet potatoes thoroughly – excess water makes the dish soggy
- Use room temperature eggs and milk for better mixing and even texture
- Test doneness with a toothpick in the center – it should come out with just a few moist crumbs
