Ingredients
Scale
- 4 pieces (1.5 lbs) boneless, skinless chicken breasts
- 4 cloves, minced fresh garlic
- 1/2 cup raw honey
- 2 peppers, chopped chipotle peppers in adobo
- 1/4 cup low-sodium soy sauce
- 2 tablespoons fresh lime juice
- 2 cups cooked rice
- 1/4 cup, chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Create Marinade: Mix honey, minced garlic, chopped chipotle peppers, soy sauce, and lime juice in a large bowl until well combined
- Marinate Chicken: Add chicken breasts to marinade, ensuring all pieces are coated. Let marinate for at least 30 minutes at room temperature
- Prepare Cooking Surface: Preheat grill to medium-high heat (400°F) or preheat oven to the same temperature
- Cook Chicken: Grill chicken 6-8 minutes per side or bake for 25 minutes until internal temperature reaches 165°F
- Prepare Rice: Cook rice according to package instructions while chicken is cooking
- Rest and Slice: Let cooked chicken rest for 5 minutes, then slice into bite-sized pieces
- Assemble Bowls: Layer rice in bowls, top with sliced chicken, drizzle with remaining sauce, and garnish with fresh cilantro
Notes
- Pound chicken breasts to even thickness for uniform cooking and better marinade penetration
- Reserve some marinade before adding raw chicken to use as a finishing sauce
- Use a meat thermometer to ensure chicken reaches 165°F internal temperature for food safety
- Let chicken rest after cooking to redistribute juices and prevent dryness when slicing
