- 4 (6-ounce) salmon fillets, skin removed
- 2 tbsp butter
- 2 tbsp honey
- 2 tsp olive oil
- 2 large mangoes, diced
- 1 red bell pepper
- Β½ red onion
- 1 handful fresh cilantro, chopped
- 1 lime, juiced
- Salt to taste
- Black pepper to taste
Instructions
- Prep: Dice mangoes, bell pepper, onion, and cilantro. Combine in bowl with lime juice and salt
- Season: Rub salmon with olive oil, season generously with salt and pepper on both sides
- Cook: Melt butter in skillet, stir in honey. Add salmon, cook 4-5 minutes per side
- Finish: Check salmon is opaque and caramelized. Top with mango salsa and serve immediately
Notes
- Pat salmon completely dry before seasoning to ensure proper searing and caramelization
- Use a meat thermometer – salmon is done at 145Β°F internal temperature
- Let mango salsa sit 15 minutes before serving to allow flavors to develop
- Mango salsa can be made up to 2 hours ahead and refrigerated
