- 2 cups fresh huckleberries
- 2 cups water
- ¾ cup ketchup
- 2 tablespoons molasses
- 2 tablespoons brown sugar
- 2 tablespoons grape vinegar
- 1 tablespoon hot sauce
- 1 teaspoon liquid smoke
- 2 teaspoons chipotle pepper
- ½ teaspoon sea salt
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
Instructions
- Add huckleberries and water into a saucepan. Bring to a boil over medium-high heat for 10 minutes. Use a potato masher to mash the huckleberries as they cook, breaking them down to release their juices and natural pectin.
- Add the ketchup, molasses, brown sugar, grape vinegar, hot sauce, liquid smoke, chipotle pepper, sea salt, onion powder, and garlic powder. Simmer over medium-high heat for another 20 minutes, stirring occasionally.
- If you prefer a thicker consistency, cook longer, keeping in mind it will thicken as it cools. Allow to cool, then blend for a smoother texture or leave as is for a more rustic appearance.
Notes
- Fresh huckleberries work best, but frozen ones can be substituted without thawing first
- The glaze will continue thickening as it cools, so don’t overcook if you want a brushable consistency
- Always taste and adjust seasoning before final use, as huckleberry sweetness can vary significantly
- Apply glaze during the last 10 minutes of grilling to prevent burning due to the sugar content
