Description

A delicious and easy one-pot lasagna made in the Instant Pot with ground meat, broken lasagna noodles, and creamy cheese layers. Perfect for busy weeknights when you want comfort food fast.


Ingredients

  • 1 lb Ground beef or Italian sausage
  • 1, chopped Medium onion
  • 4, minced Garlic cloves
  • 28 oz Canned diced tomatoes
  • 4 cups Low-sodium broth
  • 8 oz, broken Lasagna noodles
  • 1 cup Ricotta cheese
  • 2 tsp Italian seasoning
  • 2 cups Fresh spinach or kale
  • 1 cup Shredded mozzarella

Instructions

  • Step 1: Brown the Meat – Set Instant Pot to sauté mode. Add ground meat, chopped onion, and minced garlic. Cook until meat is browned and onions are translucent, about 5-7 minutes.
  • Step 2: Add Liquid Base – Stir in diced tomatoes with juice, broth, and Italian seasoning. Scrape the bottom of the pot to prevent burning and incorporate all flavors.
  • Step 3: Add Pasta – Break lasagna noodles into 3-4 inch pieces and stir into the mixture. Ensure noodles are mostly submerged in liquid.
  • Step 4: Pressure Cook – Secure the lid and set to high pressure for 5 minutes. Allow natural pressure release for 5 minutes, then quick release remaining pressure.
  • Step 5: Add Cheese – Stir in ricotta cheese until melted and creamy. Fold in fresh spinach or kale until wilted.
  • Step 6: Serve – Serve hot topped with shredded mozzarella cheese. Let rest 2-3 minutes before serving for best texture.

Notes

  • Break noodles into similar-sized pieces for even cooking and better texture distribution
  • Use fire-roasted tomatoes for deeper, smokier flavor that mimics long-simmered sauce
  • Don’t skip the natural pressure release – it prevents mushy pasta and allows flavors to meld
