  • 1 cup diced Ripe mango
  • 2 peppers, finely chopped Fresh jalapeños
  • ¼ cup chopped Fresh cilantro
  • 2 tbsp freshly squeezed Lime juice
  • 2 tbsp Extra virgin olive oil
  • To taste Salt and pepper

Instructions

  • Prepare oven and bread: Preheat oven to 400°F (200°C). Slice baguette into half-inch thick pieces and arrange on baking sheet.
  • Season and toast bread: Brush each slice with olive oil, sprinkle with salt and pepper. Bake 5-7 minutes until golden brown and crispy.
  • Prep fresh ingredients: While bread toasts, dice mango, finely chop jalapeños (remove seeds for less heat), and chop cilantro.
  • Make mango mixture: In bowl, combine diced mango, jalapeños, cilantro, lime juice, salt, and pepper. Mix gently to avoid mashing mango.
  • Assemble bruschetta: Spoon mixture onto each toasted baguette slice just before serving. Drizzle with additional olive oil if desired.
  • Serve immediately: Present right away to maintain optimal crunch and prevent bread from becoming soggy.
