  • Author: Jennie Graham
  • Total Time: 2 hours
  • Yield: 10-15 minutes before serving 1x

Description

A rich and comforting Japanese beef curry with tender beef chuck, vegetables, and aromatic spices. This hearty dish features a perfect balance of savory and slightly sweet flavors that make it a family favorite.

Ingredients

Scale
  • 2 lbs beef chuck, bite-sized pieces
  • 1 large yellow onion, chopped
  • 2 medium carrots, sliced
  • 2 medium potatoes, diced
  • 4 cloves garlic, minced
  • 3 tbsp curry powder
  • 1/4 cup soy sauce, low-sodium
  • 4 cups beef broth

Instructions

  1. Step 1: Prepare aromatics – Heat oil in large pot over medium heat. Sauté chopped onions and minced garlic until translucent, about 5 minutes
  2. Step 2: Brown the beef – Add beef chuck cubes to pot. Brown on all sides for approximately 8 minutes, creating flavorful crust
  3. Step 3: Add vegetables – Stir in sliced carrots and diced potatoes. Cook for additional 5 minutes, stirring occasionally
  4. Step 4: Season and add liquid – Sprinkle curry powder over mixture. Add beef broth and soy sauce, bringing to gentle boil
  5. Step 5: Simmer – Reduce heat to low, cover pot, and simmer for at least one hour until beef is tender
  6. Step 6: Thicken (optional) – For thicker consistency, remove lid and cook uncovered for additional 20 minutes
  7. Step 7: Serve – Serve over steamed rice or noodles, garnish with fresh green onions if desired

Notes

  • Pat beef dry before browning to achieve better searing and prevent steaming in the pot
  • Don’t overcrowd the pot when browning beef; work in batches if necessary for proper caramelization
  • Toast curry powder for 30 seconds before adding liquids to enhance flavor complexity and aroma
  • Store leftovers in refrigerator for up to 3 days – flavors improve overnight
