- 4 chicken thighs, bone-in, skin-on
- Salt and pepper to taste
- 2 tablespoons olive oil
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme
- 1/2 cup grated Parmesan cheese
Instructions
- Step 1: Prep – Preheat oven to 400°F (200°C). Spray baking dish with nonstick cooking spray if needed.
- Step 2: Season – Generously season both sides of chicken thighs with salt and pepper, pressing gently to adhere.
- Step 3: Sear – Heat olive oil in large skillet over medium-high heat. Sear chicken skin-side down for 5-7 minutes until golden. Flip and cook 2 minutes more.
- Step 4: Sauté – Remove chicken and add mushrooms and garlic to same skillet. Sauté until mushrooms are soft, about 3 minutes.
- Step 5: Build Sauce – Pour in chicken broth and heavy cream. Stir in thyme and bring to simmer. Add Parmesan cheese and stir until melted.
- Step 6: Finish – Return chicken to skillet, spooning sauce over top. Transfer to oven and bake 20-25 minutes until chicken reaches 165°F internal temperature.
Notes
- Pat chicken completely dry before seasoning to achieve the best golden sear and crispy skin
- Use freshly grated Parmesan instead of pre-grated for smoother sauce integration
- Let the sauce simmer gently to prevent the cream from breaking or curdling
- Check internal temperature with a meat thermometer to ensure chicken is perfectly cooked
