A delicious and easy recipe for Korean BBQ Chicken that you’ll love making at home.

- 1 lb boneless, skinless chicken thighs
- 2 tbsp fresh ginger, grated
- 3 tbsp Korean gochujang
- 1/4 cup low-sodium soy sauce
- 1/4 cup brown sugar (dark preferred)
- 1 tbsp sesame oil
- 2 stalks green onions, finely chopped
- 2 cloves garlic cloves, minced
Instructions
- Prepare Marinade: In a bowl, whisk together soy sauce, gochujang, minced garlic (2 cloves), brown sugar, grated ginger, and sesame oil until smooth and well combined
- Marinate Chicken: Place chicken thighs in a resealable bag or bowl and pour marinade over them. Ensure each piece is well-coated and refrigerate for at least 30 minutes
- Preheat Grill: Heat grill to medium-high temperature (about 375°F). Clean grates and oil lightly to prevent sticking
- Grill Chicken: Remove chicken from marinade (reserve some) and place on grill. Cook for 6-7 minutes per side until caramelized and internal temperature reaches 165°F
- Baste and Finish: Baste with reserved marinade during grilling for added flavor. Let rest for 3 minutes before slicing
- Garnish and Serve: Slice chicken and garnish with chopped green onions. Serve immediately while hot
Notes
- Reserve marinade before adding raw chicken to use for basting – never reuse marinade that touched raw meat
- Pound chicken thighs to even thickness for uniform cooking and better marinade penetration
- Let chicken come to room temperature 15 minutes before grilling for more even cooking results
- Rest cooked chicken for 3-5 minutes to redistribute juices and prevent dryness when slicing
