  • 1/4 tsp cayenne pepper

For the Coating:

  • 2 cups all-purpose flour
  • 1 tbsp kosher salt
  • 1 tbsp white pepper
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup all-purpose flour (for first dredge)
  • 1 large egg
  • 1 cup sparkling water

For the Sauce:

  • 4 tbsp unsalted butter
  • 2 tbsp honey
  • 2 tbsp sugar
  • 2 tbsp soy sauce

Additional:

  • Vegetable oil for frying

Instructions

  1. Marinate chicken tenders with all listed spices for at least 15 minutes.

  2. Prepare dredging station: 3 bowls – one with plain flour, one with wet batter (flour + egg + sparkling water), and one with seasoned flour mix.

  3. Coat chicken: flour → wet batter → seasoned flour. Let coated tenders rest 5 minutes.

  4. Heat oil to 350°F (175°C).

  5. First fry in batches, 4-5 mins each until lightly golden. Drain on rack.

  6. Second fry for 1-2 mins until deep golden and extra crispy. Season with salt.

  7. Make sauce: Melt butter, then stir in honey, sugar, and soy. Cook 1-2 mins until glossy.

  8. Coat chicken: toss or brush with sauce and serve immediately.
