Description

Crispy and flavorful Korean zucchini fritters made with fresh grated zucchini, eggs, and aromatic seasonings. These golden fritters are perfect as an appetizer or side dish.

  • 1 cup all-purpose flour
  • 2 pieces large eggs
  • 1/4 cup chopped green onions
  • 3 pieces minced garlic cloves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for shallow frying

Instructions

  1. Step 1: Prepare Zucchini – Grate zucchinis using box grater. Place grated zucchini in clean kitchen towel and squeeze firmly to remove excess moisture. This prevents soggy fritters.
  2. Step 2: Make Batter – In large bowl, combine squeezed zucchini with flour, eggs, chopped green onions, minced garlic, salt, and black pepper. Mix until well combined but don’t overmix.
  3. Step 3: Heat Oil – Heat vegetable oil in non-stick skillet over medium heat until shimmering. Oil should be about 1/4 inch deep for proper shallow frying.
  4. Step 4: Fry Fritters – Drop spoonfuls of batter into hot oil, flattening slightly. Fry for 3 minutes per side until golden brown and crispy. Don’t overcrowd the pan.
  5. Step 5: Drain and Serve – Remove fritters from oil and drain on paper towels. Serve immediately while hot and crispy with your favorite dipping sauce.

  • Squeeze zucchini thoroughly in kitchen towel to remove maximum moisture – this is crucial for crispy results
