  • 1 cup Cherry tomatoes

Instructions

  • Step 1: Cook Pasta – Bring a large pot of salted water to boil. Add orzo and cook for 8-10 minutes until al dente. Drain and let cool completely to prevent wilting the spinach.
  • Step 2: Prepare Dressing – In a small bowl, whisk together fresh lemon juice, olive oil, minced garlic, salt, and pepper until well emulsified and smooth.
  • Step 3: Combine Ingredients – In a large bowl, combine cooled orzo, drained chickpeas, fresh spinach, halved cherry tomatoes, and crumbled feta cheese if using.
  • Step 4: Dress and Mix – Pour the lemon dressing over the salad mixture and toss gently to coat all ingredients evenly without crushing the tomatoes.
  • Step 5: Rest and Serve – Allow the salad to sit for at least 15 minutes before serving to let flavors meld and develop properly.
