  • Author: Jennie Graham
  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Description

A fragrant and flavorful Asian-inspired dish featuring tender marinated chicken thighs with aromatic lemongrass served over delicate rice vermicelli noodles. This complete meal combines savory, sweet, and citrusy flavors for a satisfying dining experience.

Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs
  • 2 stalks fresh lemongrass stalks
  • 4 cloves garlic cloves
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 cup rice vermicelli noodles
  • 1 cup mixed vegetables
  • 1/4 cup fresh cilantro
  • 1 lime fresh lime

Instructions

  • Step 1: Marinate the Chicken – In a bowl, combine chopped lemongrass, minced garlic, soy sauce, and brown sugar. Add chicken thighs and marinate in the refrigerator for at least 1 hour.
  • Step 2: Prepare Noodles – Cook rice vermicelli according to package instructions; drain and toss with olive oil to prevent sticking.
  • Step 3: Sauté Chicken – Heat oil in a skillet over medium-high heat. Sauté marinated chicken until golden brown and cooked through (about 5 minutes per side).
  • Step 4: Make Sauce – In the same skillet, add reserved marinade and lime juice; simmer until thickened and glossy.
  • Step 5: Assemble Bowls – Place noodles in bowls, top with sautéed chicken and fresh vegetables arranged attractively.
  • Step 6: Garnish & Serve – Sprinkle with cilantro and serve warm; add lime wedges on the side for extra brightness.

Notes

  • Pound chicken thighs slightly to ensure even cooking and better marinade absorption throughout the meat
  • Remove the tough outer layers of lemongrass and use only the tender white parts for the best flavor
  • Don’t overcook the vermicelli noodles as they’ll become mushy; they should be tender but still have a slight bite
  • Reserve some marinade before adding raw chicken to use for the sauce, ensuring food safety
