- 1 cup Green or brown lentils, rinsed
- 4 cups Vegetable broth
- 2 cups Fresh kale, chopped
- 1 medium Yellow onion, diced
- 2 cloves Garlic, minced
- 2 medium Carrots, diced
- 2 tablespoons Olive oil
- 1 teaspoon Cumin powder
- Salt and pepper to taste
Instructions
- Step 1: Sauté Aromatics – Heat olive oil in large pot over medium heat. Add diced onion and minced garlic, sauté until translucent, about 5 minutes
- Step 2: Add Vegetables – Stir in diced carrots and rinsed lentils, sauté for another 3 minutes to develop flavors
- Step 3: Add Liquid and Seasonings – Pour in vegetable broth with cumin powder, salt, and pepper. Bring to boil, then reduce heat to low
- Step 4: Simmer – Let mixture simmer for about 30 minutes until lentils are tender but still hold their shape
- Step 5: Add Kale – Stir in chopped kale and cook until wilted, about 5 minutes. Taste and adjust seasonings before serving hot
Notes
- Rinse lentils thoroughly before cooking to remove any debris and reduce cooking foam for cleaner broth
