- 1 cup lentils
- 3 cups water
- 2 cups cherry tomatoes
- 1/2 red onion
- 1/4 cup fresh basil
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Black pepper to taste
Instructions
- Cook Lentils: Rinse lentils under cold water. In a pot, combine with 3 cups of water, bring to a boil, then simmer for 20-25 minutes until tender. Drain and cool.
- Prepare Vegetables: While lentils cook, chop cherry tomatoes, slice red onion, and prepare fresh basil.
- Make Dressing: Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Combine Ingredients: In a large bowl, combine lentils, cherry tomatoes, red onion, and basil. Pour dressing over the mixture and toss gently.
- Serve: Serve immediately or chill in the fridge before serving.
Notes
- Don’t overcook lentils – they should be tender but still hold their shape for the best texture
- Let cooked lentils cool slightly before adding dressing to prevent the basil from wilting
- Use the freshest basil possible and slice it just before serving to maintain bright color
- Soak red onion slices in cold water for 10 minutes to reduce sharpness if desired
