Description

  • 4 medium (800g) Russet potatoes, peeled and diced
  • 1 lb (450g) Lean ground beef
  • 1 whole Medium onion, finely chopped
  • 4 cloves Garlic cloves, minced
  • 3 cups (720ml) Low-sodium beef broth
  • 1 cup (240ml) Heavy cream
  • 2 cups (200g) Sharp cheddar cheese, shredded
  • ½ cup (75g) Turkey bacon bits
  • 2 stalks Green onions, sliced

Instructions

  • Step 1: Brown the Beef – In a large pot over medium heat, brown the ground beef until no longer pink. Drain excess fat if needed.
  • Step 2: Add Aromatics – Add the chopped onion and minced garlic to the pot; sauté until fragrant, about 3 minutes.
  • Step 3: Add Base Ingredients – Stir in the diced potatoes and beef broth; mix well to combine all ingredients.
  • Step 4: Simmer – Bring to a boil, then reduce heat and cover. Let simmer for about 20 minutes until potatoes are tender.
  • Step 5: Create Creamy Texture – Slowly stir in heavy cream while mashing some potatoes against the pot for a creamy texture.
  • Step 6: Add Cheese – Add shredded cheddar cheese, stirring constantly until melted and smooth.
