30-Minute Low Carb Pizza Bowls Without the Crust

Description

Creamy, garlicky mushroom-stuffed shells baked in rich Alfredo sauce and topped with gooey mozzarella. A hearty vegetarian dish full of flavor.


Ingredients

Scale
  • 20 jumbo pasta shells
  • 1 cup ricotta cheese
  • 1/2 cup Parmesan cheese
  • 1 cup chopped cooked mushrooms
  • 1 egg, beaten
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cups Alfredo sauce
  • 1/4 cup shredded mozzarella

Instructions

  1. Cook pasta and sauté mushrooms.
  2. Mix filling: cheeses, mushrooms, egg, seasoning.
  3. Fill shells, layer in baking dish with Alfredo.
  4. Top with cheese, bake covered 25 mins + 10 uncovered.
  5. Rest and serve.

Notes

Don’t skip browning the mushrooms or the egg in the mix. Mascarpone can be added for extra creaminess.
