Description
Creamy, garlicky mushroom-stuffed shells baked in rich Alfredo sauce and topped with gooey mozzarella. A hearty vegetarian dish full of flavor.
Ingredients

- 20 jumbo pasta shells
- 1 cup ricotta cheese
- 1/2 cup Parmesan cheese
- 1 cup chopped cooked mushrooms
- 1 egg, beaten
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups Alfredo sauce
- 1/4 cup shredded mozzarella
Instructions
- Cook pasta and sauté mushrooms.
- Mix filling: cheeses, mushrooms, egg, seasoning.
- Fill shells, layer in baking dish with Alfredo.
- Top with cheese, bake covered 25 mins + 10 uncovered.
- Rest and serve.
Notes
Don’t skip browning the mushrooms or the egg in the mix. Mascarpone can be added for extra creaminess.
