- 1 can (14.5 oz) diced tomatoes, well drained
- 5 links uncooked turkey or pork Italian sausage (19.5 oz)
- 4 tsp olive oil, divided
- 1/2 tsp dried oregano
- Salt and fresh-ground pepper, to taste
- 12 oz fresh mushrooms, sliced
- 1 1/2 cups grated Mozzarella cheese
- 15 slices pepperoni, halved
Instructions
- Preheat oven to 400°F. Grease an 8×11 inch casserole dish.
- Drain and blot tomatoes dry.
- Brown sausage in 2 tsp olive oil; layer in casserole dish.
- Spread tomatoes over sausage. Season with oregano, salt, pepper.
- Sauté mushrooms in remaining 2 tsp olive oil until browned; layer over tomatoes.
- Sprinkle Mozzarella on top. Arrange pepperoni slices evenly.
- Bake 25 minutes until cheese is melted and lightly browned.
- Serve hot.
Notes
- Broil 1-2 minutes after baking for crispier pepperoni.
- Use freshly grated cheese for best melt.
- Substitute hot Italian sausage for a spicier version.
