- 1 can (13.5 oz) full-fat coconut milk
- 3 tablespoons red curry paste
- 1 piece medium onion
- 3 cloves fresh garlic

- 2 cups fresh spinach (optional)

Instructions
- Prep Ingredients: Chop chicken into bite-sized pieces. Dice onion finely. Mince garlic and grate ginger fresh.
