  • 7 plain croissants
  • 7 slices sharp cheddar cheese

  • 7 large eggs
  • 1/3 cup whole milk
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 7 slices cooked beef bacon
  • Fresh chives, chopped for garnishing

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat
  3. Cook breakfast mini links for 3-4 minutes until warmed through, then set aside
  4. Whisk eggs and milk in a bowl, seasoning with salt and pepper
  5. Add remaining oil to skillet, reduce heat to medium
  6. Pour in egg mixture, gently scrambling until soft and creamy
  7. Mix honey and dijon mustard in a small bowl
  8. Slice croissants horizontally and spread honey-dijon on bottom halves
  9. Layer scrambled eggs and cheese on croissant bottoms

  12. Bake 8-10 minutes until golden and crispy
