- 2 tablespoons Dijon mustard
- 7 plain croissants
- 7 slices sharp cheddar cheese
- 1 (9-ounce) package Amylu breakfast mini links
- 7 large eggs
- 1/3 cup whole milk
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 7 slices cooked beef bacon
- Fresh chives, chopped for garnishing
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat
- Cook breakfast mini links for 3-4 minutes until warmed through, then set aside
- Whisk eggs and milk in a bowl, seasoning with salt and pepper
- Add remaining oil to skillet, reduce heat to medium
- Pour in egg mixture, gently scrambling until soft and creamy
- Mix honey and dijon mustard in a small bowl
- Slice croissants horizontally and spread honey-dijon on bottom halves
- Layer scrambled eggs and cheese on croissant bottoms
- Bake 4-5 minutes until cheese starts melting
- Add beef bacon, mini links, and chives, then top with croissant halves
- Bake 8-10 minutes until golden and crispy
