- 1 baguette, sliced
- 3 tbsp olive oil (divided)
- 2 cloves garlic, minced
- 8 oz mixed mushrooms, sliced
- 2 tbsp fresh thyme leaves
- 1/4 cup Parmesan cheese, grated
Instructions
- Prepare oven: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
- Toast bread: Arrange baguette slices on baking sheet, drizzle with 1 tbsp olive oil, and toast for 5-7 minutes until golden brown
- Sauté mushrooms: Heat remaining olive oil in skillet over medium heat. Add minced garlic and sliced mushrooms; sauté for 5 minutes until tender
- Add herbs: Stir in fresh thyme leaves just before removing from heat to preserve their flavor
- Assemble: Top each toasted baguette slice with mushroom mixture and sprinkle with Parmesan cheese
- Serve: Serve warm on a platter, drizzling with additional olive oil if desired
Notes
- Don’t overcrowd mushrooms in the pan as they’ll steam instead of sauté, resulting in soggy texture
- Add thyme at the very end to prevent it from becoming bitter during the cooking process
- Choose day-old baguette for better texture that won’t get soggy under the mushroom topping
- Pat mushrooms dry with paper towels before slicing to remove excess moisture for better browning
