Creamy no-bake cheesecake made with protein-rich Greek yogurt, ready in just 10 minutes with no oven required.

- 1 cup graham cracker crumbs
- ¼ cup coconut oil or unsalted butter (melted)
- 2 tablespoons sugar (optional but recommended)
- 8 ounces cream cheese (softened at room temperature)
- ¾ cup plain Greek yogurt
- 2–4 tablespoons honey
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- Whipped cream and fresh cherries (optional for topping)
Instructions
- Add the graham crackers and melted coconut oil or butter to a medium bowl. Stir to combine until the mixture holds together when pressed.
- Add mixture to the bottom of an 8×8-inch pan or divide among individual cups. Press down firmly to create an even crust layer.
- Add the remaining ingredients (except the whipped cream and cherries) to another medium bowl. Whisk until well mixed and creamy. Taste and increase sweetness as desired.
- Add the yogurt mixture on top of the graham cracker crumbs, spreading evenly with a spatula.
- Place the cheesecake into the fridge to chill for 2 hours before serving to allow it to firm up slightly.
- Top with whipped cream and cherries, if using, and serve chilled for the best texture and flavor.
Notes
- Let cream cheese sit at room temperature for at least 30 minutes before mixing to prevent lumps in your filling
- Use thick Greek yogurt for the best texture – if yours seems watery, strain it through cheesecloth for 30 minutes
- Taste the filling before chilling and adjust honey to your preference since sweetness varies by brand
- Press the crust firmly with the bottom of a measuring cup to create an even, compact base
- Chill for at least 2 hours, but overnight chilling creates an even firmer, more traditional cheesecake texture
