Description

Creamy no-bake cheesecake made with protein-rich Greek yogurt, ready in just 10 minutes with no oven required.


Ingredients

  • 1 cup graham cracker crumbs
  • ¼ cup coconut oil or unsalted butter (melted)
  • 2 tablespoons sugar (optional but recommended)
  • 8 ounces cream cheese (softened at room temperature)
  • ¾ cup plain Greek yogurt
  • 24 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • Whipped cream and fresh cherries (optional for topping)

Instructions

  1. Add the graham crackers and melted coconut oil or butter to a medium bowl. Stir to combine until the mixture holds together when pressed.
  2. Add mixture to the bottom of an 8×8-inch pan or divide among individual cups. Press down firmly to create an even crust layer.
  3. Add the remaining ingredients (except the whipped cream and cherries) to another medium bowl. Whisk until well mixed and creamy. Taste and increase sweetness as desired.
  4. Add the yogurt mixture on top of the graham cracker crumbs, spreading evenly with a spatula.
  5. Place the cheesecake into the fridge to chill for 2 hours before serving to allow it to firm up slightly.
  6. Top with whipped cream and cherries, if using, and serve chilled for the best texture and flavor.

  • Let cream cheese sit at room temperature for at least 30 minutes before mixing to prevent lumps in your filling
  • Use thick Greek yogurt for the best texture – if yours seems watery, strain it through cheesecloth for 30 minutes
