Description

A delicious and easy one bowl blueberry crisp with a golden oat topping and juicy blueberry filling. Perfect for dessert or brunch, this recipe uses just one bowl for easy cleanup.

Ingredients

Scale
  • 4 cups fresh or frozen blueberries
  • ¼ cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract
  • 1 cup rolled oats
  • ¾ cup all-purpose flour
  • ⅓ cup brown sugar, packed
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease your 8×8-inch baking dish
  2. Make the Filling: In a large bowl, combine blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss gently to coat, then transfer mixture into the greased baking dish
  3. Prepare the Topping: In the same bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes and work with hands or pastry cutter until mixture forms crumbly texture
  4. Assemble and Bake: Evenly sprinkle topping over blueberry filling. Bake for 40-45 minutes until topping is golden and filling bubbles
  5. Cool and Serve: Let crisp cool for 10-15 minutes before serving to allow filling to set properly

Notes

  • Keep butter cubes in the freezer for 10 minutes before mixing for the crispiest topping texture
  • Don’t overmix the topping – visible butter pieces create the best crispy results
  • If using frozen blueberries, don’t thaw them first – they’ll release the perfect amount of juice during baking
  • Test doneness by checking if the filling bubbles around the edges and topping is golden brown
