Description
A delicious and easy one bowl blueberry crisp with a golden oat topping and juicy blueberry filling. Perfect for dessert or brunch, this recipe uses just one bowl for easy cleanup.
Ingredients
Scale
- 4 cups fresh or frozen blueberries
- ¼ cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp lemon juice
- ½ tsp vanilla extract
- 1 cup rolled oats
- ¾ cup all-purpose flour
- ⅓ cup brown sugar, packed
- 1 tsp ground cinnamon
- ½ tsp salt
- ½ cup cold unsalted butter, cubed
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease your 8×8-inch baking dish
- Make the Filling: In a large bowl, combine blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss gently to coat, then transfer mixture into the greased baking dish
- Prepare the Topping: In the same bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add cold butter cubes and work with hands or pastry cutter until mixture forms crumbly texture
- Assemble and Bake: Evenly sprinkle topping over blueberry filling. Bake for 40-45 minutes until topping is golden and filling bubbles
- Cool and Serve: Let crisp cool for 10-15 minutes before serving to allow filling to set properly
Notes
- Keep butter cubes in the freezer for 10 minutes before mixing for the crispiest topping texture
- Don’t overmix the topping – visible butter pieces create the best crispy results
- If using frozen blueberries, don’t thaw them first – they’ll release the perfect amount of juice during baking
- Test doneness by checking if the filling bubbles around the edges and topping is golden brown
