  • 2 large eggs, room temperature
  • 3 tablespoons low-fat sour cream

  • ½ teaspoon black gel food coloring
  • 1 teaspoon red gel food coloring

Instructions

  1. Preheat oven to 325°F and line a 12-cavity cupcake pan with liners.
  2. Grind graham crackers until almost finely ground, leaving some medium chunks for texture. Combine with cacao powder, brown sugar, cinnamon, and melted butter.
  3. Divide mixture between cupcake liners (about 2 tablespoons per cup) and press firmly into bottoms.
  4. Bake crusts for 5 minutes, then remove and cool completely.
  5. Mix cream cheese, sugar, and flour on low speed until combined, scraping bowl sides as needed.
  6. Add vanilla and first egg, mixing slowly. Add remaining egg, then sour cream and lemon juice.
  7. Switch to whisk attachment and beat on medium-high for 1-2 minutes until smooth. Add gel food colorings and mix until incorporated.
  8. Add 2 tablespoons filling to each liner. Use toothpick dipped in black gel coloring to create swirls on top.
  9. Bake for 16-18 minutes with a pot of water in oven. Turn off heat and leave door halfway open for 5 minutes.
  10. Cool for 15-20 minutes at room temperature, then refrigerate for at least 1 hour before serving.
