- 4 tablespoons unsalted butter, melted

- ½ cup pure cane sugar
- 3 tablespoons organic all-purpose flour
- 2 teaspoons vanilla extract
- 2 large eggs, room temperature
- 3 tablespoons low-fat sour cream
- 2 teaspoons fresh lemon juice
- ½ teaspoon black gel food coloring
- 1 teaspoon red gel food coloring
Instructions
- Preheat oven to 325°F and line a 12-cavity cupcake pan with liners.
- Grind graham crackers until almost finely ground, leaving some medium chunks for texture. Combine with cacao powder, brown sugar, cinnamon, and melted butter.
- Divide mixture between cupcake liners (about 2 tablespoons per cup) and press firmly into bottoms.
- Bake crusts for 5 minutes, then remove and cool completely.
- Mix cream cheese, sugar, and flour on low speed until combined, scraping bowl sides as needed.
- Add vanilla and first egg, mixing slowly. Add remaining egg, then sour cream and lemon juice.
- Switch to whisk attachment and beat on medium-high for 1-2 minutes until smooth. Add gel food colorings and mix until incorporated.
- Add 2 tablespoons filling to each liner. Use toothpick dipped in black gel coloring to create swirls on top.
- Bake for 16-18 minutes with a pot of water in oven. Turn off heat and leave door halfway open for 5 minutes.
- Cool for 15-20 minutes at room temperature, then refrigerate for at least 1 hour before serving.
