Ingredients

  • ½ cup diced tomatoes
  • 1 jalapeño pepper, seeded and diced
  • 1 clove garlic, minced
  • 2 tablespoons red onion, diced
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cumin

Instructions

  1. Dice peaches and tomatoes into small, uniform pieces. Remove seeds from jalapeño and dice finely. Mince garlic and dice red onion.
  2. In a mixing bowl, combine diced peaches, tomatoes, jalapeño, garlic, red onion, and chopped cilantro.
  3. Add fresh lime juice, kosher salt, and ground cumin to the mixture.
  4. Stir all ingredients together gently. Taste and adjust seasonings as needed, adding more salt, lime juice, or cumin to preference.
  5. Let the pico de gallo sit for 5 minutes to allow flavors to meld before serving.
