- 2 large yellow onions
- 2 medium Granny Smith apples
- 2 tsp olive oil
- 1 tbsp butter
- 1 tbsp balsamic vinegar
- 2 tsp fresh thyme leaves
Instructions
- Prep the pastry: Preheat oven to 400°F (200°C). Roll out thawed puff pastry on floured surface and fit into tart pan
- Caramelize onions: Heat olive oil and butter in skillet over medium heat. Add sliced onions and cook 20-25 minutes, stirring occasionally until golden brown
- Add vinegar: Stir balsamic vinegar into caramelized onions during last few minutes of cooking
- Assemble tart: Layer caramelized onions over pastry, then arrange apple slices on top. Sprinkle with fresh thyme
- Bake: Bake 25-30 minutes until golden brown and puffed. Cool slightly before slicing
Notes
- Slice onions uniformly for even caramelization – aim for 1/4-inch thick slices
- Don’t rush the caramelization process; low and slow cooking develops the best flavor
- Use a mandoline or sharp knife to slice apples paper-thin for the best texture
- Store leftovers for up to 3 days and reheat in a 350°F oven for 10 minutes to restore crispness
