Description
A delicious homemade version of the classic fast-food favorite featuring seasoned ground beef, melted Mexican cheese, and fresh tomatoes wrapped in soft flour tortillas.
Ingredients
Scale
- 1 pound lean ground beef
- 1 packet taco seasoning
- 6 medium flour tortillas
- 1.5 cups shredded Mexican cheese blend
- 1 cup diced tomatoes
- 1/2 cup water
Instructions
- Cook the Beef: Brown ground beef in large skillet over medium-high heat, breaking it apart as it cooks for 6-8 minutes until fully cooked.
- Mash and Season: Use potato masher to break beef into fine crumbles. Add taco seasoning and water, simmer 3-4 minutes until liquid absorbs.
- Prepare Tortillas: Warm tortillas in microwave for 30 seconds wrapped in damp paper towel to make them pliable.
- Assemble: Place 1/3 cup beef mixture, 1/4 cup cheese, and 2 tablespoons diced tomatoes on each tortilla.
- Roll and Steam: Roll tightly, wrap in damp paper towel, microwave 30-45 seconds until cheese melts and tortilla softens.
- Serve: Remove paper towel carefully and serve immediately while hot and melted.
Notes
- Don’t skip the mashing step – it’s crucial for achieving that authentic fast-food texture everyone remembers.
- Keep paper towels just damp, not soaking wet, to prevent soggy tortillas during steaming.
- Let the beef mixture cool slightly before assembling to prevent immediate cheese melting and easier rolling.
- Warm your serving plates beforehand to keep the meximelts hot longer after preparation.
