Description

A delicious and easy recipe for pesto pasta cherry tomatoes that combines fresh basil pesto with sweet cherry tomatoes and fusilli pasta for a perfect meal.


Ingredients

  • 8 oz Fusilli pasta
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Basil pesto
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp Olive oil
  • 1/4 cup Fresh basil leaves, chopped

Instructions

  • Step 1: Cook Pasta – Cook the fusilli pasta in salted boiling water for 8-10 minutes until al dente. Drain and rinse with cold water.
  • Step 2: Prepare Pesto Base – In a mixing bowl, combine the basil pesto and olive oil; stir well to create a smooth mixture.
  • Step 3: Add Fresh Elements – Add halved cherry tomatoes and chopped basil to the bowl; mix gently to avoid crushing tomatoes.
  • Step 4: Combine Everything – Incorporate the cooled pasta and grated Parmesan cheese; toss until evenly coated.
  • Step 5: Chill and Serve – Cover and refrigerate for at least 1 hour to allow flavors to meld. Serve chilled, garnished with additional Parmesan and basil if desired.

Notes

  • Use room temperature cherry tomatoes for the best flavor development in your dish
  • Don’t skip rinsing the pasta with cold water as it stops the cooking process immediately
